Hayden Quinn's Coastal Road Trip


Chef & keen adventurer Hayden Quinn, his wife Jax, and their cute pup Peanut love a relaxed road trip, and their recent roadie in the comfort of an Apollo motorhome was one worth sharing! 

Hayden, Jax & Peanut spent a few blissful days exploring the south coast of New South Wales - soaking up the sun and cooking up a storm along the way. While in the camper, Hayden whipped up an easy and delicious curry, sharing how simple it is to make great tasting food on the road - proving that cooking in a camper doesn't need to be boring or basic! 

Hayden's Campervan Curry Recipe - 

Ingredients - 
● 1 tbs neutral oil
● 1 x small brown onion, diced
● 4 x cloves garlic, crushed and chopped
● 3 x sprigs curry leaf, leaves only
● 2 tbs curry powder (I used Love my Earth Fish Masala)
● 1 tbs brown mustard seeds
● Sea salt, to taste
● 1 (400ml) can coconut milk
● 400g peel green prawns
● White rice, cooked to your liking
● Coriander, to garnish

Method
Step 1. Heat a large skillet or saucepan over medium heat. Add oil and onion, cook for 2-3mins until onion begins to soften. Next add garlic and curry leaf, stir well to
combine. Once fragrant, add curry powder and mustard seeds, and toast for a further 1-2mins.
Step 2. Add coconut milk and stir, incorporating all the curry powder and spices into the mix, the coconut milk should change colour and bring to a gentle simmer. Add
prawns and cook until done to your liking. *Note, you may need to add a little water to the mix if it becomes too thick.
Step 3. Serve curry over rice and garnish with coriander. Enjoy!

Day 1: Sydney to Patonga 

Distance: 90 kms 
Travel time: ~1.5 hours 

Pick up your Apollo campervan in Sydney and ease into the trip with a gentle first leg north to Patonga. Starting with a shorter drive helps this Sydney itinerary feel relaxed from the outset, giving you time to settle into life on the road without spending most of the day behind the wheel. Patonga is a peaceful waterside village on the edge of Broken Bay, and it makes an excellent first overnight stop thanks to its quiet atmosphere, scenic setting, and easy access to the beach. 

Where to stop between Sydney and Patonga 

Break up the drive with a stop around Brooklyn and the Hawkesbury River, where the scenery begins to shift from city streets to broad waterways and bushy hillsides. It is an easy place to pause for coffee, grab picnic supplies, or enjoy a short walk before continuing on. If you want to stretch the first day a little further, you could also take your time through the northern beaches or upper Central Coast approaches, keeping the focus on a slow start rather than ticking off too much at once. Day 2: Patonga to The Entrance 

Distance: 50 kms 
Travel time: ~1.5 hours 

Today is intentionally light on driving, giving you more time to enjoy the Central Coast as you continue north to The Entrance. The distances are short, so you can spend more time exploring beaches, walking waterfront paths, and stopping for coffee or lunch whenever somewhere catches your eye. The Entrance has long been a classic NSW holiday town, and it still delivers that easy coastal break feeling. 

Where to stop between Patonga and The Entrance 

Take your time moving through the Central Coast and consider pausing at Avoca Beach or Terrigal for a scenic break. Both make great coffee or bakery stops and are ideal for a quick walk along the sand before getting back on the road. If your trip falls on a weekend, this stretch can also be a good one for picking up local produce to enjoy later at the campground. Day 3: The Entrance to Lake Macquarie 

Distance: 75 kms 
Travel time: ~1.5 hours 

Leave The Entrance after breakfast and continue north to Lake Macquarie, where the pace remains easy and the scenery opens up again. Australia’s largest coastal saltwater lake offers a beautiful mix of picnic areas, walking tracks, calm bays, and waterfront viewpoints. It is an excellent midpoint on this Sydney to Newcastle 5 day itinerary, especially if you enjoy days that feel outdoorsy without needing to be overly structured. 

Where to stop between The Entrance and Lake Macquarie

If you are visiting from June to November, whale watching can add another memorable layer to the day. Enjoy a relaxed breakfast in Newcastle, take one last walk by the beach if time allows, and then begin the drive south with room for a few scenic pauses on the way.

Break up the journey with a stop around Lake Macquarie or the Central Coast for coffee, lunch, or a final beach walk. Terrigal, Avoca, or the Hawkesbury region all make pleasant places to pause before re-entering the city.
