Hayden Quinn's Coastal Road Trip


Chef & keen adventurer Hayden Quinn, his wife Jax, and their cute pup Peanut love a relaxed road trip, and their recent roadie in the comfort of an Apollo motorhome was one worth sharing! 

Hayden, Jax & Peanut spent a few blissful days exploring the south coast of New South Wales - soaking up the sun and cooking up a storm along the way. While in the camper, Hayden whipped up an easy and delicious curry, sharing how simple it is to make great tasting food on the road - proving that cooking in a camper doesn't need to be boring or basic! 

Hayden's Campervan Curry Recipe - 

Ingredients - 
● 1 tbs neutral oil
● 1 x small brown onion, diced
● 4 x cloves garlic, crushed and chopped
● 3 x sprigs curry leaf, leaves only
● 2 tbs curry powder (I used Love my Earth Fish Masala)
● 1 tbs brown mustard seeds
● Sea salt, to taste
● 1 (400ml) can coconut milk
● 400g peel green prawns
● White rice, cooked to your liking
● Coriander, to garnish

Method
Step 1. Heat a large skillet or saucepan over medium heat. Add oil and onion, cook for 2-3mins until onion begins to soften. Next add garlic and curry leaf, stir well to
combine. Once fragrant, add curry powder and mustard seeds, and toast for a further 1-2mins.
Step 2. Add coconut milk and stir, incorporating all the curry powder and spices into the mix, the coconut milk should change colour and bring to a gentle simmer. Add
prawns and cook until done to your liking. *Note, you may need to add a little water to the mix if it becomes too thick.
Step 3. Serve curry over rice and garnish with coriander. Enjoy!

Day 1: Christchurch to Lake Tekapo

Your Christchurch road trip begins with campervan pick up in Christchurch and an easy run southwest into the heart of the South Island. This is one of those drives that immediately feels like a holiday. The city falls away, the roads open out, and the landscape shifts into wide river plains, farmland, and distant mountain silhouettes. Because this campervan itinerary is all about slow paced travel, it is worth leaving early enough to enjoy a few relaxed stops before arriving in Lake Tekapo for your first lakeside evening. 

Where to stop between Christchurch and Lake Tekapo 

Break up the journey with a stop around the Rakaia Gorge area for a leg stretch and a look at the striking braided river scenery Canterbury is known for. From there, continue to Geraldine, one of the most pleasant small-town pauses on this route. Start early at the Church of the Good Shepherd, the tiny stone church that has become one of the most photographed spots in New Zealand. Set right on the lakeshore, it is especially beautiful in the softer light of morning, with the turquoise water and alpine backdrop creating an almost unreal scene. If you are travelling in early summer, this is also a lovely time to admire the famous lupins around public areas near the lake. It is a great day for couples who want a mix of easy activity, food stops, and genuine downtime, with only short local drives between the village, Tekapo Springs, and the campground.

Begin with breakfast and coffee in the village. Lake Tekapo may be small, but it punches well above its weight when it comes to relaxed cafe stops. A morning at a local spot like The Greedy Cow suits the mood perfectly before you drift over to Tekapo Springs for a few hours of soaking and switching off. This return leg completes a Christchurch itinerary that feels full without ever feeling busy, which is exactly what a five day escape should do. 

Where to stop between Lake Tekapo and Christchurch 

On the way back, Geraldine is again a worthwhile pause for lunch or a coffee break. Stopping here helps split the drive nicely and keeps the trip relaxed right to the end. If you skipped any scenic pauses on the way down, this is the time to pull over and take them in. The route back through Canterbury has a spacious, open beauty of its own, and after several days in the Mackenzie Country, it gives you a chance to reflect on just how much scenery you have managed to fit into a relatively short campervan road trip.
