Known as one of Australia’s premier wine regions, it’s worth pulling over and settling in for a hearty meal or two at some of the Hunter’s 150 wineries and restaurants.

Byron Bay is your northernmost destination and the height of coastal living. Everything about Byron is lush, vibrant and deserving of its world-class fame. Explore boutique stores and cafes in quaint hinterland villages or beach hop from Belongil to Wategos. Stretch your legs on the Cape Byron walking track as you explore rainforests and clifftops. You might even spot dolphins when you reach the lighthouse—Australia’s most easterly point.

Ready to relax? A good dose of sand, salt and sea will get you there. Take your time wandering through small beach towns like family-friendly South West Rocks or paddle out at one of Yamba’s top surfing beaches. You also won’t want to miss Coffs Harbour—home to the Big Banana, Dolphin Marine Conservation Park and world-heritage listed Dorrigo National Park. There’s always more to discover at every stop, with markets, cafes and shops showcasing the best of New South Wales’ produce and locally made goods.

If there’s a time to take the scenic drive and indulge in country-town food, it’s now. On your way to Bellingen, keep an eye out for Waterfall Way—a stunning route that guides you through the region’s protected rainforest to cascading waterfalls. Wander through the town where heritage and good taste infuse with everyday life. Dine at the 120-year-old pub on Hyde Street and sample Bello’s local beer at Bellingen Brewery & Co, a converted factory on Church Street.
